Canonigo Recipe up on ManilaSpeak.com

My first article for the year is posted at ManilaSpeak.

Canonigo is a Filipino version of the French île flottante meaning “floating island”. I have yet to find out the origin of the name though. A web search for the word turns up “canon” and “corn salad”. Neither accurately describe the dessert. I have a feeling it is a result of the French influence on Sulipan cooking, though I’ll have to look for a reference that can support it.

UPDATE:

The site ManilaSpeak has gone offline. I decided to upload the recipe here instead.
