Cocktails are becoming a common request for me to deconstruct with friends.
This recipe brings memories of high school. Mom would make this for dinner, and I’d have it as my packed lunch the next day. In school I would eat it at room temperature. When my friends would see my lunch, they would ask for a bite. I would get one bite and my lunch would get passed around. When it would come back to me, there were two to three bites left. Since we’re having a lot of people coming over for Christmas, with some people meeting for the first time, I thought it would be easier on everyone if I made name tags, so I made a background for the name tags.
Website hosting is a complicated affair to the uninitiated. Most people use free sites because it’s faster and easier to set up and maintain. In the mid-nineties, it would be places like Geocities and Yahoo that would host free personal sites. Geocities was later bought out by Yahoo. Lots of web sites that were hosted on Geocities went to Internet heaven and can only be found if they were archived at the Internet Wayback Machine. Nowadays, places like WordPress, Blogster, and Blogger that have taken over the free web site space. My Russian Salad recipe is up at ManilaSpeak.com. I haven’t seen it in parties recently and thought it would be a good idea to share it to bring it back.
What makes it different from other potato salad recipes is the addition of beets. They add a festive color to the salad. Even if it is pink. I really don’t like pink, but I like beets. It’s a compromise.
