My ukoy recipe is up at ManilaSpeak.
The present. Or thereabouts.
I recreated aparon, a childhood favorite, and the recipe is posted at Manila Speak. I’ve been trying to make the recipe for years, but found that starting from scratch was a bit too much. Starting with hosts makes it an easy recipe to do.

Canonigo is a Filipino version of the French île flottante meaning “floating island”. I have yet to find out the origin of the name though. A web search for the word turns up “canon” and “corn salad”. Neither accurately describe the dessert. I have a feeling it is a result of the French influence on Sulipan cooking, though I’ll have to look for a reference that can support it.
